Description
These easy 3 ingredient cereal bars are made with oat cereal, peanut butter, and honey in just 10 minutes. A no bake, kid friendly snack perfect for lunchboxes, after school, or busy mornings.
Ingredients
3 cups oat O cereal, plain or lightly sweetened
1/2 cup creamy peanut butter, or almond butter, or sunflower seed butter for nut free
1/3 cup honey, or maple syrup, or brown rice syrup
Instructions
1. Add the peanut butter and honey to a small saucepan or microwave safe bowl. Warm over low heat or in short microwave bursts, stirring until the mixture is smooth, glossy, and pourable.
2. Place the cereal in a large mixing bowl. Pour the warm peanut butter honey mixture over the cereal and fold with a spatula until every piece is lightly and evenly coated.
3. Line an 8 by 8 inch square pan with parchment paper, leaving overhang on two sides. Transfer the cereal mixture to the pan and press very firmly into an even layer using the back of a spatula or clean damp hands.
4. Refrigerate the pan for at least 1 to 2 hours, or until the center feels firm when gently pressed. Do not skip this step or the bars will crumble when sliced.
5. Lift the set slab out of the pan using the parchment handles. Place on a cutting board and slice into 10 to 12 bars or squares. Store in an airtight container in the fridge for up to 5 days or freeze between layers of parchment for up to 1 month.
Notes
Storage: Keep bars in an airtight container in the refrigerator for up to 5 days. Separate layers with parchment to prevent sticking. Freeze for up to 1 month.
Nut free option: Replace peanut butter with sunflower seed butter or soy nut butter for a school safe version.
Low sugar option: Use unsweetened cereal and reduce honey to 1/4 cup. Texture will be slightly less firm.
Chocolate variation: Press a handful of mini chocolate chips gently into the top of the warm mixture before chilling for easy cereal bars chocolate style treats.
