Simple 3-ingredient vegetable soup diet recipe for 7-day weight loss reset. This nutrient-dense, low-calorie soup is packed with broccoli, cauliflower, peppers, carrots, and cabbage to support healthy eating habits and portion control.
Ingredients
2 large yellow onions, diced
4 garlic cloves, minced
2 bell peppers (red and yellow), chopped
4 medium carrots, sliced
3 celery stalks, chopped
1 small head cauliflower, cut into florets
2 cups broccoli florets
2 medium zucchini, chopped
5–6 cups chopped green cabbage (or substitute spinach/kale)
2 (14.5 oz) cans diced tomatoes (no salt added)
8 cups low-sodium vegetable broth
2 tablespoons tomato paste (optional, adds richness)
2 teaspoons dried oregano
1 teaspoon dried basil
1 teaspoon smoked paprika
½ teaspoon black pepper
¼ teaspoon red pepper flakes (optional)
2 tablespoons fresh lemon juice (add at the end—non-negotiable)
Fresh cilantro or parsley for serving
Instructions
1. In a large stockpot, add diced onions with a splash of broth (or 1 tsp olive oil if you use it). Sauté over medium heat for 3-4 minutes until softened.
2. Add garlic, celery, carrots, and bell peppers. Cook for 5 minutes, stirring occasionally.
3. Pour in diced tomatoes, tomato paste, vegetable broth, and all dried spices. Stir well.
4. Add cauliflower and broccoli. Bring to a boil, then reduce heat and simmer for 10 minutes.
5. Add zucchini and cabbage (or greens). Simmer another 10-15 minutes until vegetables are tender but not mushy.
6. Turn off heat. Stir in lemon juice. Taste and adjust seasoning.
7. Serve hot, garnished with fresh herbs.
8. Store in airtight containers: 4-5 days in fridge, up to 3 months in freezer.
Notes
The lemon juice is what transforms this from boiled vegetables into actual soup. Don’t skip it.
For Instant Pot: Sauté vegetables 5 minutes, add all ingredients except lemon, pressure cook High 5 minutes, quick release, stir in lemon.
For Slow Cooker: Add all ingredients except lemon, cook Low 6 hours or High 4 hours, stir in lemon before serving.
Vegetables can turn mushy in Instant Pot/Slow Cooker – use stovetop for best texture.
Pair with protein on Days 5-6 like grilled tofu, tempeh, chicken, or fish for balanced nutrition.
Use low-sodium broth to control salt intake when eating soup multiple times daily.
If cabbage/broccoli causes bloating, use more zucchini and spinach instead.
