- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- 2 cups cream cheese, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1 tsp ground cinnamon
- 3 cups apples, peeled and diced
- ¼ cup brown sugar
- 1 cup rolled oats
- ½ cup all-purpose flour
Instructions
- Preheat oven to 350°F (175°C) and line the bottom of a 9-inch springform pan with parchment paper.
- Mix graham cracker crumbs and melted butter in a bowl and press into the bottom of the pan firmly.
- In a large bowl, beat cream cheese and granulated sugar until smooth, then add eggs one at a time, mixing well. Stir in vanilla and cinnamon, and pour over the crust.
- Sauté apples with brown sugar and a pinch of cinnamon until tender, then spread over the cheesecake layer.
- Blend oats, flour, and remaining butter to create the crumble topping, then sprinkle it over the apples.
- Bake for 50-60 minutes until the center is set and edges are golden. Let cool and refrigerate for at least 4 hours before serving.
Notes
Use fresh butter for the richest flavor and let the cheesecake cool slowly to prevent cracking.
