Instructions
- Preheat your oven to 350°F (175°C) and lightly grease and flour an 8×8 inch metal baking pan.
- In a small bowl, combine ¾ cup flour, ½ cup brown sugar, 2 tsp ground cinnamon, and ⅛ tsp salt. Add melted butter and mix until crumbly.
- In a separate bowl, mix â…“ cup brown sugar and 1 tsp ground cinnamon for the optional cinnamon brown sugar swirl.
- In a medium bowl, whisk together ⅔ cup vegetable oil, 1 tsp vanilla extract, 1 large egg, and ½ cup whole milk until smooth.
- In a large bowl, whisk together 1½ cups all-purpose flour, ⅓ cup granulated sugar, 1½ tsp baking powder, and ¼ tsp salt.
- Pour the wet mixture into the dry ingredients and stir gently until just combined.
- Spread half of the batter into the prepared pan, sprinkle the cinnamon brown sugar mixture on top, then cover with the remaining batter and add streusel topping.
- Bake for 18 to 20 minutes for a metal pan or 30 to 35 minutes for a glass dish, until a toothpick comes out clean.
- Cool the cake completely on a wire rack before glazing.
- In a medium bowl, whisk together 1 cup powdered sugar, 3 tbsp milk, and 1 tsp vanilla extract for the glaze.
- Drizzle the glaze over the cooled cake, slice, and serve.
Notes
For more flavor, consider adding chopped nuts or a hint of orange zest. Store the cake covered at room temperature for up to two days.
