  • 1½ teaspoons baking powder
  • ¼ teaspoon salt
  • 1 cup powdered sugar
  • 3 tablespoons whole milk
  • 1 teaspoon pure vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly grease and flour an 8×8 inch metal baking pan.
  2. In a small bowl, combine ¾ cup flour, ½ cup brown sugar, 2 tsp ground cinnamon, and ⅛ tsp salt. Add melted butter and mix until crumbly.
  3. In a separate bowl, mix â…“ cup brown sugar and 1 tsp ground cinnamon for the optional cinnamon brown sugar swirl.
  4. In a medium bowl, whisk together ⅔ cup vegetable oil, 1 tsp vanilla extract, 1 large egg, and ½ cup whole milk until smooth.
  5. In a large bowl, whisk together 1½ cups all-purpose flour, ⅓ cup granulated sugar, 1½ tsp baking powder, and ¼ tsp salt.
  6. Pour the wet mixture into the dry ingredients and stir gently until just combined.
  7. Spread half of the batter into the prepared pan, sprinkle the cinnamon brown sugar mixture on top, then cover with the remaining batter and add streusel topping.
  8. Bake for 18 to 20 minutes for a metal pan or 30 to 35 minutes for a glass dish, until a toothpick comes out clean.
  9. Cool the cake completely on a wire rack before glazing.
  10. In a medium bowl, whisk together 1 cup powdered sugar, 3 tbsp milk, and 1 tsp vanilla extract for the glaze.
  11. Drizzle the glaze over the cooled cake, slice, and serve.

Notes

For more flavor, consider adding chopped nuts or a hint of orange zest. Store the cake covered at room temperature for up to two days.
