- 1 cup Biscoff cookies, crushed
- 1/2 cup unsalted butter, melted
- 1 cup sugar
- 1/2 cup all-purpose flour
- 1/4 cup cocoa powder
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup Biscoff spread
Instructions
- Preheat your oven to 350°F (175°C) and grease a baking pan.
- In a bowl, combine the crushed Biscoff cookies and melted butter to form the crust. Press it evenly into the bottom of the prepared baking pan.
- In another bowl, whisk together the sugar, flour, cocoa powder, eggs, and vanilla extract until well combined and glossy.
- Pour the brownie batter over the cookie crust and gently level it.
- Drop spoonfuls of Biscoff spread onto the top of the brownie batter and swirl it into the mixture.
- Bake for about 25-30 minutes or until a toothpick inserted comes out with a few moist crumbs.
- Let cool before slicing into squares and serving.
