- 1 sheet puff pastry, thawed
- 4 oz cream cheese, softened
- 1/4 cup powdered sugar
- 1 tsp vanilla extract
- 1/2 cup fresh blueberries
- 1 egg (for egg wash)
- 1 tbsp sugar (for sprinkling)
- A little extra vanilla if desired
Instructions
- Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
- Combine the softened cream cheese, powdered sugar, and vanilla extract in a small bowl until smooth and creamy.
- Roll out the thawed puff pastry lightly on a floured surface and cut it into four equal squares.
- Spoon about one tablespoon of the cream cheese filling into the center of each pastry square and top with fresh blueberries.
- Fold the corners of each square inward to create a pocket and pinch the edges firmly to seal.
- Brush a lightly beaten egg over the surface of each pastry and sprinkle with sugar.
- Place the pastries on the prepared baking sheet and bake for 20 to 25 minutes until golden brown.
- Cool slightly on a wire rack before serving.

For a dairy-free option, substitute with plant-based cream cheese and puff pastry.
