  • 1 sheet puff pastry, thawed
  • 4 oz cream cheese, softened
  • 1/4 cup powdered sugar
  • 1 tsp vanilla extract
  • 1/2 cup fresh blueberries
  • 1 egg (for egg wash)
  • 1 tbsp sugar (for sprinkling)
  • A little extra vanilla if desired

Instructions

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Combine the softened cream cheese, powdered sugar, and vanilla extract in a small bowl until smooth and creamy.
  3. Roll out the thawed puff pastry lightly on a floured surface and cut it into four equal squares.
  4. Spoon about one tablespoon of the cream cheese filling into the center of each pastry square and top with fresh blueberries.
  5. Fold the corners of each square inward to create a pocket and pinch the edges firmly to seal.
  6. Brush a lightly beaten egg over the surface of each pastry and sprinkle with sugar.
  7. Place the pastries on the prepared baking sheet and bake for 20 to 25 minutes until golden brown.
  8. Cool slightly on a wire rack before serving.

Notes

For a dairy-free option, substitute with plant-based cream cheese and puff pastry.
