- 1 sheet puff pastry
- 1 cup fresh blueberries
- 4 oz cream cheese, softened
- 1/4 cup sugar
- 1 egg (for egg wash)
- 1 tsp vanilla extract
- 1 tbsp lemon juice
- 1 tbsp cornstarch
- Powdered sugar (for dusting)
Instructions
- Preheat the oven to 400°F (200°C).
- Roll out puff pastry on a lightly floured surface and cut into squares.
- Mix softened cream cheese, sugar, vanilla, and lemon juice until smooth.
- Place a dollop of the cream cheese mixture on each pastry square.
- Toss blueberries with cornstarch and place a few berries on top of the cream cheese.
- Fold the corners of the pastry over the filling to create a pocket.
- Beat the egg and brush it over the pastry.
- Bake for 15-20 minutes or until golden brown.
- Let cool and dust with powdered sugar before serving.
