- 2 cups butternut squash, peeled and cubed
- 2 cups apples, peeled, cored, and sliced
- 1/2 cup rolled oats
- 1/2 cup all-purpose flour (or gluten-free blend)
- 1/3 cup brown sugar (or coconut sugar)
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, melted (or coconut oil)
- 1/4 cup maple syrup (optional)
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven to 375°F (190°C).
- Cube the butternut squash and slice the apples into wedges.
- In a large bowl, combine the butternut squash with olive oil, salt, cinnamon, and nutmeg; toss to coat.
- Spread the seasoned squash on a baking sheet and roast for 20-25 minutes, turning halfway through.
- In another bowl, mix rolled oats, flour, brown sugar, and melted butter until crumbly.
- In a greased baking dish, layer half of the roasted butternut squash, then the sliced apples, followed by maple syrup and vanilla extract, and top with remaining squash.
- Spread the oat mixture evenly over the top and bake for an additional 25-30 minutes until golden and bubbling.
- Allow to cool slightly before serving.
Notes
Serve warm or at room temperature; pairs well with Greek yogurt or vanilla ice cream.
