A cozy and nutritious bake combining butternut squash and apples, topped with a crispy streusel, perfect for autumn gatherings.


Ingredients

  • 2 cups butternut squash, peeled and cubed
  • 2 cups apples, peeled, cored, and sliced
  • 1/2 cup rolled oats
  • 1/2 cup all-purpose flour (or gluten-free blend)
  • 1/3 cup brown sugar (or coconut sugar)
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, melted (or coconut oil)
  • 1/4 cup maple syrup (optional)
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cube the butternut squash and slice the apples into wedges.
  3. In a large bowl, combine the butternut squash with olive oil, salt, cinnamon, and nutmeg; toss to coat.
  4. Spread the seasoned squash on a baking sheet and roast for 20-25 minutes, turning halfway through.
  5. In another bowl, mix rolled oats, flour, brown sugar, and melted butter until crumbly.
  6. In a greased baking dish, layer half of the roasted butternut squash, then the sliced apples, followed by maple syrup and vanilla extract, and top with remaining squash.
  7. Spread the oat mixture evenly over the top and bake for an additional 25-30 minutes until golden and bubbling.
  8. Allow to cool slightly before serving.

Serve warm or at room temperature; pairs well with Greek yogurt or vanilla ice cream.
