Instructions
- Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
- Cream together the butter and sugar until light and fluffy.
- Add the eggs and peppermint extract to the mixture and blend until combined.
- In another bowl, whisk together the flour, baking powder, and a pinch of salt.
- Mix the dry ingredients into the wet mixture until just incorporated.
- Divide the dough in half; color one half with red food coloring.
- Wrap both portions in plastic wrap and refrigerate for at least 30 minutes.
- Take small pieces of each color, roll into ropes, twist together, and shape into candy canes.
- Place the cookies on the baking sheets and bake for 8–10 minutes until edges are golden.
- Cool on a wire rack, then drizzle with melted white chocolate and sprinkle with crushed candy canes for decoration.
