Ingredients

  • 1 cup brown sugar
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 3 cups rolled oats
  • 2 cups chopped apples, peeled and cored
  • 1 cup caramel sauce

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking dish.
  2. Cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  3. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. In another bowl, combine the flour, baking soda, cinnamon, and salt, then gradually blend this into the creamed mixture.
  5. Stir in the oats and then add the chopped apples.
  6. Spread half of the mixture into the prepared baking dish to form a base.
  7. Drizzle caramel sauce over the base, then spread the remaining oat mixture on top.
  8. Bake for 25-30 minutes or until golden brown. Allow to cool, then drizzle with more caramel sauce before cutting into bars.

Notes

For extra crunch, fold in 1/2 cup chopped walnuts or pecans. Cool completely before refrigerating; avoid leaving perishable toppings out more than two hours.
