A delightful cake filled with tart cherries and topped with smooth cherry cream cheese frosting, perfect for any celebration.

- 2 cups all-purpose flour (sifted)
- 1 ½ cups granulated sugar
- ½ cup unsalted butter, softened
- 1 cup milk (room temperature)
- 3 ½ teaspoons baking powder
- 1 teaspoon vanilla extract
- ½ teaspoon salt
- 3 large eggs (room temperature)
- 2 cups cherries, pitted and halved
- 8 ounces cream cheese, softened
- 4 cups powdered sugar
- ½ cup cherry juice
- 1 teaspoon almond extract
Instructions
- Preheat the oven to 350°F (175°C) and grease and flour two 9-inch round cake pans.
- In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Add in the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
- In another bowl, mix the flour, baking powder, and salt. Gradually add this dry mixture to the creamed mixture, alternating with milk, starting and ending with the flour mixture.
- Fold in the cherries gently.
- Divide the batter evenly between the prepared pans and bake for 25-30 minutes, or until a toothpick comes out clean.
- Allow cakes to cool in the pans for 10 minutes before transferring to a wire rack to cool completely.
- For the frosting, beat cream cheese until smooth, then gradually add powdered sugar and cherry juice until well combined. Stir in almond extract.
- Once the cakes are completely cool, spread some frosting on top of one layer, place the second layer on top, and frost the top and sides of the cake.
- Decorate with additional cherries if desired and serve.
Notes
Use fresh cherries when possible for the best flavor. Room temperature ingredients result in a fluffier cake.
