- 1 cup unsalted butter, softened
- 1/2 cup powdered sugar (plus extra for dusting)
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1/4 teaspoon salt
- 1 cup dried cherries, chopped
- Optional: 1 cup finely chopped nuts (walnuts or pecans)
- Optional: 1 teaspoon cinnamon
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a mixing bowl, cream together the softened butter and 1/2 cup powdered sugar until light and fluffy.
- Mix in the vanilla extract.
- Gradually add the flour and salt, mixing until combined. If using, add chopped nuts and cinnamon.
- Fold in the chopped dried cherries gently.
- Scoop tablespoon-sized portions of dough and roll them into balls. Place them on the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 12-15 minutes or until the bottoms are lightly golden.
- Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
- Once cooled, dust generously with powdered sugar before serving.
Notes
Chill the dough for 30 minutes for firmer cookies and use kitchen scissors to chop dried cherries for ease.
