- 1¾ cups all-purpose flour
- ½ cup unsweetened cocoa powder
- 1 tsp baking soda
- ½ tsp baking powder
- ¼ tsp salt
- ½ cup unsalted butter, softened
- ½ cup granulated sugar
- ½ cup brown sugar
- 1 egg
- 1 tsp peppermint extract
- ½ cup semi-sweet chocolate chips
- ½ cup heavy cream
- Crushed peppermint candies for decoration
Instructions
- Preheat oven to 350°F (175°C) and prepare muffin tin.
- In a bowl, whisk together flour, cocoa powder, baking soda, baking powder, and salt.
- In another bowl, cream butter, granulated sugar, and brown sugar until fluffy.
- Add egg and peppermint extract, and mix until combined.
- Gradually add the dry ingredients and mix until just combined. Fold in chocolate chips.
- Scoop dough into muffin tin, filling each cup halfway and pressing down lightly.
- Bake for 10-12 minutes and press down centers to create cup shapes.
- In a saucepan, heat heavy cream until simmering; pour over chocolate chips and let sit before stirring until smooth.
- Once cookies are cool, fill each cup with ganache and chill for 30 minutes.
- Decorate with crushed peppermint candies and optionally drizzle with melted white chocolate.
Notes
