Description

Delightful bite-sized cookie cups filled with creamy peppermint chocolate ganache, perfect for holiday gatherings.


Ingredients

  • 1¾ cups all-purpose flour
  • ½ cup unsweetened cocoa powder
  • 1 tsp baking soda
  • ½ tsp baking powder
  • ¼ tsp salt
  • ½ cup unsalted butter, softened
  • ½ cup granulated sugar
  • ½ cup brown sugar
  • 1 egg
  • 1 tsp peppermint extract
  • ½ cup semi-sweet chocolate chips
  • ½ cup heavy cream
  • Crushed peppermint candies for decoration

Instructions

  1. Preheat oven to 350°F (175°C) and prepare muffin tin.
  2. In a bowl, whisk together flour, cocoa powder, baking soda, baking powder, and salt.
  3. In another bowl, cream butter, granulated sugar, and brown sugar until fluffy.
  4. Add egg and peppermint extract, and mix until combined.
  5. Gradually add the dry ingredients and mix until just combined. Fold in chocolate chips.
  6. Scoop dough into muffin tin, filling each cup halfway and pressing down lightly.
  7. Bake for 10-12 minutes and press down centers to create cup shapes.
  8. In a saucepan, heat heavy cream until simmering; pour over chocolate chips and let sit before stirring until smooth.
  9. Once cookies are cool, fill each cup with ganache and chill for 30 minutes.
  10. Decorate with crushed peppermint candies and optionally drizzle with melted white chocolate.

Notes

Store in an airtight container for up to a week. Ideal for holiday gifting and gatherings.
