- ½ cup melted butter
- 2 tablespoons sugar
- 8 ounces dark chocolate (at least 60% cocoa)
- 2 cups heavy whipping cream
- ½ cup powdered sugar
- 1 teaspoon peppermint extract
- 2 pasteurized eggs
- Optional: crushed peppermints, whipped cream, chocolate shavings for garnish
Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine the crushed graham crackers or Oreo cookies, melted butter, and sugar. Press into a 9-inch pie dish and bake for 10-12 minutes. Allow to cool.
- Melt dark chocolate in a microwave-safe bowl in 30-second intervals until smooth. Let it cool slightly.
- In a separate bowl, whip the heavy cream until soft peaks form. Gradually add powdered sugar and peppermint extract, continuing to whip until stiff peaks.
- Fold one-third of the whipped cream into the melted chocolate, then gently fold in the remaining whipped cream.
- Pour the mousse into the cooled crust, cover, and refrigerate for at least 4 hours or overnight.
- Before serving, garnish with whipped cream, crushed peppermints, and chocolate shavings.
