Ingredients

  • ½ cup melted butter
  • 2 tablespoons sugar
  • 8 ounces dark chocolate (at least 60% cocoa)
  • 2 cups heavy whipping cream
  • ½ cup powdered sugar
  • 1 teaspoon peppermint extract
  • 2 pasteurized eggs
  • Optional: crushed peppermints, whipped cream, chocolate shavings for garnish

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine the crushed graham crackers or Oreo cookies, melted butter, and sugar. Press into a 9-inch pie dish and bake for 10-12 minutes. Allow to cool.
  3. Melt dark chocolate in a microwave-safe bowl in 30-second intervals until smooth. Let it cool slightly.
  4. In a separate bowl, whip the heavy cream until soft peaks form. Gradually add powdered sugar and peppermint extract, continuing to whip until stiff peaks.
  5. Fold one-third of the whipped cream into the melted chocolate, then gently fold in the remaining whipped cream.
  6. Pour the mousse into the cooled crust, cover, and refrigerate for at least 4 hours or overnight.
  7. Before serving, garnish with whipped cream, crushed peppermints, and chocolate shavings.
