- 1 cup unsalted butter, softened
- ¾ cup granulated sugar
- ¾ cup brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 2 ½ cups all-purpose flour
- 1 teaspoon baking powder
- Pinch of salt
- 2 tablespoons cocoa powder
- Gel or liquid food colorings
Instructions
- Beat the butter, granulated sugar, and brown sugar in a mixing bowl until creamy and light.
- Add in the egg and vanilla extract, mixing until smooth.
- Sift together the flour, baking powder, and salt in a separate bowl. Gradually add to the wet mixture, mixing until just combined.
- Divide the dough into two equal halves.
- In one half, mix in the cocoa powder. In the other half, add the food coloring to achieve desired colors.
- Roll out each dough half between parchment paper to about 1/4-inch thickness.
- Layer the chocolate dough with the colored dough, then roll tightly into a log.
- Wrap the log in plastic wrap and refrigerate for at least 2 hours.
- Preheat the oven to 350°F (175°C).
- Slice the chilled log into 1/4-inch thick rounds and place on a lined baking sheet.
- Bake for 10-12 minutes, until edges are lightly golden. Cool on a wire rack.
Notes
Chill the dough for easier slicing and maintain cookie shape. These cookies freeze well!
