Description

Vibrant and flavorful Christmas Pinwheel Cookies are perfect for holiday baking and impressing guests.


Ingredients

  • 1 cup unsalted butter, softened
  • ¾ cup granulated sugar
  • ¾ cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 ½ cups all-purpose flour
  • 1 teaspoon baking powder
  • Pinch of salt
  • 2 tablespoons cocoa powder
  • Gel or liquid food colorings

Instructions

  1. Beat the butter, granulated sugar, and brown sugar in a mixing bowl until creamy and light.
  2. Add in the egg and vanilla extract, mixing until smooth.
  3. Sift together the flour, baking powder, and salt in a separate bowl. Gradually add to the wet mixture, mixing until just combined.
  4. Divide the dough into two equal halves.
  5. In one half, mix in the cocoa powder. In the other half, add the food coloring to achieve desired colors.
  6. Roll out each dough half between parchment paper to about 1/4-inch thickness.
  7. Layer the chocolate dough with the colored dough, then roll tightly into a log.
  8. Wrap the log in plastic wrap and refrigerate for at least 2 hours.
  9. Preheat the oven to 350°F (175°C).
  10. Slice the chilled log into 1/4-inch thick rounds and place on a lined baking sheet.
  11. Bake for 10-12 minutes, until edges are lightly golden. Cool on a wire rack.

Notes

Chill the dough for easier slicing and maintain cookie shape. These cookies freeze well!
