Ingredients

  • 1 ½ cups all-purpose flour
  • ½ cup unsalted butter, cold and cubed
  • 1 tablespoon sugar
  • 1 pinch salt
  • Ice water (as needed)
  • 1 cup whole milk
  • 1 cup heavy cream
  • ¾ cup granulated sugar
  • 4 large eggs
  • 2 teaspoons ground cinnamon
  • 1 teaspoon vanilla extract
  • Optional: pinch of nutmeg
  • Optional: almond extract (to taste)

Instructions

  1. In a large mixing bowl, combine the flour, cold butter, sugar, and salt. Use a pastry cutter to blend until the mixture resembles coarse crumbs.
  2. Stir in ice water, 1 tablespoon at a time, until dough holds together. Chill the dough for at least 30 minutes.
  3. Preheat the oven to 350°F (175°C).
  4. In a saucepan over medium-low heat, combine the milk and cream until just about to simmer, then remove from heat.
  5. In a separate bowl, whisk together the eggs and granulated sugar until light and frothy.
  6. Gradually add the warm milk and cream mixture to the eggs, whisking continuously to temper.
  7. Add in the vanilla extract and ground cinnamon, and optional nutmeg.
  8. Roll out the chilled dough into a 12-inch circle and transfer to a pie dish, crimping the edges.
  9. Pour the custard mixture into the crust.
  10. Bake for 40-45 minutes or until set, then cool to room temperature and refrigerate for at least 2 hours before serving.

Notes

For a crispier crust, consider blind baking the pie crust before adding the filling. Serve with whipped cream or powdered sugar dusting.
