- 1 ½ cups all-purpose flour
- ½ cup unsalted butter, cold and cubed
- 1 tablespoon sugar
- 1 pinch salt
- Ice water (as needed)
- 1 cup whole milk
- 1 cup heavy cream
- ¾ cup granulated sugar
- 4 large eggs
- 2 teaspoons ground cinnamon
- 1 teaspoon vanilla extract
- Optional: pinch of nutmeg
- Optional: almond extract (to taste)
Instructions
- In a large mixing bowl, combine the flour, cold butter, sugar, and salt. Use a pastry cutter to blend until the mixture resembles coarse crumbs.
- Stir in ice water, 1 tablespoon at a time, until dough holds together. Chill the dough for at least 30 minutes.
- Preheat the oven to 350°F (175°C).
- In a saucepan over medium-low heat, combine the milk and cream until just about to simmer, then remove from heat.
- In a separate bowl, whisk together the eggs and granulated sugar until light and frothy.
- Gradually add the warm milk and cream mixture to the eggs, whisking continuously to temper.
- Add in the vanilla extract and ground cinnamon, and optional nutmeg.
- Roll out the chilled dough into a 12-inch circle and transfer to a pie dish, crimping the edges.
- Pour the custard mixture into the crust.
- Bake for 40-45 minutes or until set, then cool to room temperature and refrigerate for at least 2 hours before serving.
Notes
For a crispier crust, consider blind baking the pie crust before adding the filling. Serve with whipped cream or powdered sugar dusting.
