- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon ginger, grated
- 1 tablespoon curry powder
- 1 can (14 oz) coconut milk
- 3 cups vegetable broth
- 2 cups mixed vegetables (carrots, bell peppers, etc.)
- 1 cup dumplings (store-bought or homemade)
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Heat the coconut oil in a large pot over medium heat. Add the chopped onion and sauté until translucent.
- Stir in the garlic and ginger, cooking for another minute.
- Add curry powder and stir well, letting the spices bloom in the oil for fifteen to thirty seconds.
- Pour in the coconut milk and vegetable broth, bringing it to a simmer.
- Add the mixed vegetables and cook until tender, about 5-7 minutes.
- Drop in the dumplings and cook according to package instructions or until they float.
- Season with salt and pepper to taste.
- Serve hot, garnished with fresh cilantro.
