- 8 oz. linguine (or pasta of choice)
- 1 lb boneless, skinless chicken breast or thighs
- 1/2 cup unsalted butter
- 4 cloves garlic, minced
- 1 tbsp fresh parsley, chopped
- 1 tbsp fresh chives, chopped
- 1 tbsp lemon juice
- 1 tsp paprika
- Salt and pepper to taste
- Optional: red pepper flakes
Instructions
- Cook the Linguine: Bring salted water to a boil, add linguine, and cook until al dente, about 8-10 minutes. Reserve 1/2 cup of pasta water, drain and set aside.
- Prepare the Chicken: Season chicken with salt, pepper, and paprika.
- Sear the Chicken: In a skillet, melt 2 tablespoons of butter over medium-high heat. Sear chicken for 5-7 minutes on each side until cooked and golden. Remove and let rest before slicing.
- Make the Cowboy Butter Sauce: In the skillet, lower heat and add remaining butter. Once melted, add garlic and sauté until fragrant. Add parsley, chives, lemon juice, and red pepper flakes if using; stir to combine.
- Combine: Slice chicken and return to the skillet with sauce. Add linguine and toss to coat, using reserved pasta water if needed. Season with salt and pepper to taste.
- Serve: Transfer to plates, garnish with fresh herbs if desired, and enjoy!

For best results, don’t skip the pasta water and ensure to sear the chicken well for enhanced flavor.
