A delightful holiday dessert combining creamy custard with tart cranberries.


Ingredients

  • 1 pre-made pie crust (store-bought or homemade)
  • 2 cups fresh or frozen cranberries
  • 4 large eggs
  • 1 cup granulated sugar (adjust based on taste)
  • 2 cups heavy cream or whole milk
  • 1 teaspoon pure vanilla extract
  • 2 tablespoons all-purpose flour or cornstarch
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon or nutmeg (optional)

Instructions

  1. Preheat your oven to 375°F (190°C). Fit the pie crust into a pan and prick the bottom with a fork.
  2. Rinse the cranberries under cold water and remove any bad berries.
  3. In a mixing bowl, whisk together the eggs, sugar, and salt until smooth. Gradually incorporate the cream or milk and vanilla extract.
  4. Gently fold the cranberries into the custard mixture and pour into the prepared pie crust.
  5. Bake for 45-55 minutes or until set and lightly golden. A knife inserted should come out clean but may still jiggle slightly.
  6. Cool at room temperature for at least 1 hour before slicing. Serve warm or chilled, optionally with whipped cream.

Notes

Do not overbeat the eggs and watch the baking time to avoid overcooking.
