- 1 lb steak, cut into chunks
- 4 potatoes, peeled and diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups beef broth
- 1 cup heavy cream
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large pot, heat olive oil over medium heat. Add steak chunks and cook until browned.
- Add chopped onion and minced garlic, cooking until onion is translucent.
- Stir in diced potatoes and beef broth. Bring to a boil, then reduce heat and let simmer until potatoes are tender, about 15-20 minutes.
- Reduce heat and stir in heavy cream, seasoning with salt and pepper to taste.
- Serve hot, garnished with fresh parsley.
Notes
For a richer finish, stir in a tablespoon of butter off the heat. To make it heartier, fold in kale or spinach at the end.
