Description
Deliciously crispy onion ring chips made with sweet onions and coated with panko breadcrumbs for a delightful snack.

- 2 large sweet Onions (like Vidalia)
- 1 cup All-Purpose Flour (or gluten-free flour)
- 1 teaspoon Garlic Powder (or onion powder or minced garlic)
- 1 teaspoon Paprika (or smoked paprika)
- 1 teaspoon Salt (sea salt or kosher salt)
- 1 teaspoon Black Pepper (or white pepper)
- 1 cup Buttermilk (or milk with vinegar or lemon juice)
- 2 cups Panko Breadcrumbs (or regular breadcrumbs)
- 4 cups Vegetable Oil (or canola or peanut oil)
Instructions
- Slice the onions into thin rings about a quarter inch thick and separate them.
- Pour the buttermilk into a bowl, whisk in the garlic powder and a pinch of salt, then dunk the onion rings to coat.
- Mix together flour, paprika, black pepper, and salt in a dish until combined.
- Fluff panko breadcrumbs in a separate bowl; optionally stir in herbs.
- Heat vegetable oil in a pan until shimmering (about 350°F).
- Dredge each onion ring in flour, dip in buttermilk again, then coat with panko.
- Fry in small batches, without crowding, until golden (about 2-3 minutes per side).
- Drain on paper towels and sprinkle with salt.
- Serve immediately while hot, optionally finishing with melted butter and parsley.
Notes
These chips are best served fresh. Leftovers can be revived in a 350°F oven.
