- 1 tablespoon cornstarch
- 1 teaspoon lemon juice
- For the Crumb Topping:
- 1 cup all-purpose flour
- 1/2 cup rolled oats
- 1/4 cup brown sugar
- 1/2 cup unsalted butter, melted
- 1/2 teaspoon cinnamon (optional)
Instructions
- Preheat the oven to 350°F (175°C).
- Prepare the pie crust by rolling out the dough or placing a pre-made shell in the pie dish. Blind bake for 10-12 minutes until lightly golden.
- Make the cream cheese layer by beating the softened cream cheese, adding sugar and vanilla, then mixing in the egg.
- Prepare the cranberry filling by combining cranberries, sugar, cornstarch, and lemon juice.
- Make the crumb topping by mixing flour, oats, brown sugar, and cinnamon, then adding melted butter.
- Layer the cream cheese mixture, then the cranberry filling, and top with the crumb mixture.
- Bake the pie for 45-55 minutes until the topping is golden and the cranberries bubble.
- Cool completely before slicing and serving.
Notes
For best flavor, let the pie chill for at least 2 hours before slicing. Can be served warm or cold.
