  • 3/4 cup granulated sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon lemon juice
  • For the Crumb Topping:
  • 1 cup all-purpose flour
  • 1/2 cup rolled oats
  • 1/4 cup brown sugar
  • 1/2 cup unsalted butter, melted
  • 1/2 teaspoon cinnamon (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Prepare the pie crust by rolling out the dough or placing a pre-made shell in the pie dish. Blind bake for 10-12 minutes until lightly golden.
  3. Make the cream cheese layer by beating the softened cream cheese, adding sugar and vanilla, then mixing in the egg.
  4. Prepare the cranberry filling by combining cranberries, sugar, cornstarch, and lemon juice.
  5. Make the crumb topping by mixing flour, oats, brown sugar, and cinnamon, then adding melted butter.
  6. Layer the cream cheese mixture, then the cranberry filling, and top with the crumb mixture.
  7. Bake the pie for 45-55 minutes until the topping is golden and the cranberries bubble.
  8. Cool completely before slicing and serving.

Notes

For best flavor, let the pie chill for at least 2 hours before slicing. Can be served warm or cold.
