- 4 eggs (separated, room temperature)
- ¾ cup caster sugar
- 125 g melted butter
- 1 tsp vanilla extract
- ¾ cup plain flour (sifted)
- 2 cups lukewarm milk
- ¼ cup icing sugar (for dusting)
Instructions
- Preheat the oven to 340°F (170°C) and line an 8-inch square pan, lightly buttering the sides.
- Whip egg whites to stiff peaks and set aside.
- Beat egg yolks and sugar until pale and fluffy.
- Add melted butter, vanilla, and flour to the yolk mixture and mix until smooth.
- Gradually incorporate lukewarm milk until the batter is silky.
- Gently fold in the whipped egg whites until no white streaks remain, being careful not to deflate the batter.
- Pour the batter into the prepared pan and bake for 35–60 minutes until a golden top forms with small cracks.
- Cool completely, dust with icing sugar, slice, and enjoy.
Notes
For a dairy-free option, replace milk with nut milk and butter with coconut oil or vegan butter. To make gluten-free, use a 1:1 gluten-free flour blend.
