Description

Ingredients

  • 4 eggs (separated, room temperature)
  • ¾ cup caster sugar
  • 125 g melted butter
  • 1 tsp vanilla extract
  • ¾ cup plain flour (sifted)
  • 2 cups lukewarm milk
  • ¼ cup icing sugar (for dusting)

Instructions

  1. Preheat the oven to 340°F (170°C) and line an 8-inch square pan, lightly buttering the sides.
  2. Whip egg whites to stiff peaks and set aside.
  3. Beat egg yolks and sugar until pale and fluffy.
  4. Add melted butter, vanilla, and flour to the yolk mixture and mix until smooth.
  5. Gradually incorporate lukewarm milk until the batter is silky.
  6. Gently fold in the whipped egg whites until no white streaks remain, being careful not to deflate the batter.
  7. Pour the batter into the prepared pan and bake for 35–60 minutes until a golden top forms with small cracks.
  8. Cool completely, dust with icing sugar, slice, and enjoy.

Notes

For a dairy-free option, replace milk with nut milk and butter with coconut oil or vegan butter. To make gluten-free, use a 1:1 gluten-free flour blend.
