Ingredients

  • 2 dragon fruits, halved and flesh scooped out
  • 3/4 cup unsweetened almond milk
  • 13.5 oz can unsweetened full-fat coconut milk
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Prepare your ice cream maker according to the manufacturer’s instructions.
  2. Blend the dragon fruit flesh, almond milk, coconut milk, sugar, and vanilla extract until smooth.
  3. Pour the mixture into the ice cream maker and churn until soft-serve consistency is achieved.
