Description

A comforting and warm banana jam infused with dark rum, perfect for toast, pancakes, and gifts.


Ingredients

  • 4 ripe bananas
  • 1 cup sugar
  • 1/2 cup dark rum
  • 1 tablespoon lemon juice
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon cinnamon

Instructions

  1. Mash the bananas with a fork in a medium saucepan.
  2. Add sugar, rum, lemon juice, vanilla extract, and cinnamon to the saucepan.
  3. Stir until the sugar dissolves and the mixture looks glossy.
  4. Cook over medium heat, stirring frequently, until the mixture comes to a simmer.
  5. Reduce heat to low and let it simmer for 15-20 minutes until it thickens.
  6. Remove from heat and let it cool before transferring to a jar.
  7. Store in the refrigerator for up to 2 weeks.
