A tender and sumptuous beef chuck roast slow-cooked to perfection with vegetables, perfect for simple family celebrations.
Ingredients

- 3–4 pounds beef chuck roast
- 1 tablespoon olive oil
- 2 cups beef broth
- 1 onion, sliced
- 3–4 carrots, chopped
- 3–4 potatoes, diced
- 3–4 cloves garlic, minced
- 2 teaspoons salt
- 1 teaspoon black pepper
- 1 teaspoon dried thyme
- 1 teaspoon rosemary
- 2 tablespoons Worcestershire sauce
Instructions
- Heat olive oil in a skillet over medium heat. Sear the beef chuck roast on all sides until browned.
- Place the sliced onion, chopped carrots, and diced potatoes at the bottom of the crockpot.
- Add the seared beef on top of the vegetables.
- In a bowl, mix beef broth, garlic, salt, pepper, thyme, rosemary, and Worcestershire sauce, then pour over the beef.
- Cover and cook on low for 8-10 hours or high for 4-5 hours until the beef is tender.
- Shred the beef and serve with the vegetables and gravy.
Notes
Serve with crusty bread or buttered rolls. Leftovers taste even better the next day and can be reheated easily.
