A vibrant and refreshing slaw made with grated carrots and ginger, fermented for a tangy flavor that elevates any meal.


Ingredients

  • 4 large carrots, grated
  • 1 tablespoon fresh ginger, grated
  • 1 tablespoon sea salt
  • 2 tablespoons apple cider vinegar
  • 1 cup water
  • 1 teaspoon sugar (optional)
  • 1 teaspoon black pepper (optional)

Instructions

  1. In a large bowl, combine grated carrots and grated ginger.
  2. Sprinkle sea salt over the mixture and massage it into the carrots.
  3. In a separate bowl, mix water, apple cider vinegar, and sugar until dissolved.
  4. Pour the mixture over the carrots and ginger.
  5. Pack the mixture tightly into a clean jar, leaving some headspace.
  6. Cover with a lid or cloth, allowing gases to escape.
  7. Let it ferment at room temperature for 3 to 7 days, tasting periodically.
  8. Once fermented to your liking, transfer to the refrigerator.

Notes

Taste every day after the third day to determine your preferred flavor. The slaw can keep for several weeks and the flavor will deepen over time.
