A light and tender cake made with Greek yogurt and coconut flour, perfect for everyday or special occasions.
Ingredients

- 1 cup Greek yogurt
- 1/2 cup coconut flour
- 1/2 cup honey or maple syrup (add more for extra sweetness)
- 3 eggs
- 1/2 cup shredded coconut (toasted if preferred)
- 1 tsp baking soda
- 1 tsp vanilla extract (add more for a cozy aroma)
- Optional: lemon zest, chocolate chips, or dried fruit
Instructions
- Preheat the oven to 350°F (175°C) and grease an 8-inch round cake pan.
- In a mixing bowl, combine Greek yogurt, honey or maple syrup, and eggs. Stir until smooth.
- Add coconut flour, shredded coconut, baking soda, and vanilla extract. Mix until well combined.
- If desired, fold in lemon zest, chocolate chips, or dried fruit.
- Pour the batter into the prepared cake pan and smooth the top.
- Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
- Allow to cool before serving.
Notes
For added flavor, you can dust the top with coconut flakes or a squeeze of lemon juice. Store leftovers in an airtight container.
