- 1/2 cup unsalted butter, cold and cubed
- 1 cup grated carrots
- 1/4 cup raisins or currants
- 1/2 cup buttermilk
- 1 large egg
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Whisk together the flour, sugar, baking powder, salt, cinnamon, and nutmeg in a large bowl.
- Cut in the cold butter until the mixture resembles coarse crumbs.
- Stir in the grated carrots and raisins or currants.
- Whisk together the buttermilk, egg, and vanilla extract in a separate small bowl.
- Add the buttermilk mixture to the dry ingredients and stir until just combined.
- Turn the dough out onto a floured surface and gently knead until it comes together.
- Pat the dough into a 1-inch thick circle and cut into wedges or rounds.
- Place the scones on the prepared baking sheet and bake for 15-20 minutes or until golden brown.
- Allow to cool slightly before serving.
Notes
Serve warm with butter or a simple cream cheese glaze for extra sweetness. These scones are best enjoyed fresh but can be stored in an airtight container for up to two days.
