Description

A comforting dish that blends the heartiness of pasta with the rich, savory flavors of classic French onion soup.


Ingredients

  • 8 oz pasta (fettuccine, penne, or gluten-free)
  • 3 yellow or sweet onions, thinly sliced
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 3 cloves garlic, minced
  • 1 tablespoon fresh thyme (or 1 teaspoon dried thyme)
  • 2 cups beef broth (or vegetable broth for a vegetarian option)
  • ½ cup white wine (optional)
  • 1 cup shredded Gruyère cheese (or vegan cheese)
  • Salt and pepper, to taste
  • Fresh parsley or chives, for garnish

Instructions

  1. In a large skillet, heat butter and olive oil over medium heat. Add onions and stir to coat. Cook for 15-20 minutes until caramelized.
  2. Add garlic and thyme, cooking for an additional minute until fragrant.
  3. If using, pour in white wine to deglaze the pan, scraping brown bits off the bottom. Let reduce for a couple of minutes.
  4. Stir in beef broth and bring to a simmer. Cook for another 5-10 minutes. Season with salt and pepper.
  5. Cook pasta according to package instructions until al dente. Drain and reserve ½ cup pasta water.
  6. Add pasta to the skillet, tossing to combine. Stir in reserved pasta water if sauce is too thick.
  7. Off the heat, stir in shredded cheese until melted. Serve garnished with additional cheese and herbs.

Notes

Take your time caramelizing the onions for the best flavor. Use quality broth for a richer taste.
