  • Black pepper
  • 1 cup Gruyère or Swiss cheese, grated

Instructions

  1. Caramelize the Onions: Heat butter and olive oil in a skillet. Add onions and salt. Cook on medium-low heat for 15-20 minutes until caramelized.
  2. Prepare the Pasta: Boil salted water and cook the pasta according to package directions. Reserve 1 cup of pasta water, then drain.
  3. Build the Sauce: Add broth and thyme to the caramelized onions. Simmer for 5 minutes.
  4. Combine: Stir cooked pasta into the sauce, adding reserved pasta water as needed. Mix in cheese until melted.
