- 1 tablespoon olive oil

- 8 oz pasta (fusilli, ziti, or penne)
- 2 cups low-sodium beef or vegetable broth
- 1 teaspoon fresh thyme
- Black pepper
- 1 cup Gruyère or Swiss cheese, grated
Instructions
- Caramelize the Onions: Heat butter and olive oil in a skillet. Add onions and salt. Cook on medium-low heat for 15-20 minutes until caramelized.
- Prepare the Pasta: Boil salted water and cook the pasta according to package directions. Reserve 1 cup of pasta water, then drain.
- Build the Sauce: Add broth and thyme to the caramelized onions. Simmer for 5 minutes.
- Combine: Stir cooked pasta into the sauce, adding reserved pasta water as needed. Mix in cheese until melted.
- Season and Serve: Adjust seasoning if necessary and enjoy your meal!
