- 1 large onion, thinly sliced
- 2 tablespoons butter
- 1 cup beef broth
- 1 teaspoon thyme (fresh or dried)
- Salt and pepper to taste
- 1 cup shredded Gruyère cheese
- 1 package of puff pastry, thawed
- 1 egg, beaten (for egg wash)
Instructions
- Preheat the oven to 400°F (200°C).
- Caramelize the onions: In a pan, melt the butter over medium heat. Add the sliced onions and cook until deep golden and caramelized, about 15–20 minutes.
- Deglaze: Add the beef broth and thyme, season with salt and pepper, and simmer for another 5 minutes.
- Prepare the pastry: Roll out the puff pastry and cut into squares to fit muffin tins.
- Assemble the cups: Place pastry squares in muffin tins and fill with the caramelized onion mixture.
- Add cheese: Top with shredded Gruyère cheese.
- Egg wash: Brush the edges of the pastry with beaten egg.
- Bake: Bake for 15–20 minutes or until golden brown.
- Serve warm and enjoy!
Notes
For vegetarian bites, use vegetable broth and plant-based butter; for dairy-free options, choose vegan cheese. Assemble just before baking for best texture.
