Ingredients

  • 1 tablespoon unflavored gelatin powder
  • 1/4 cup cold water
  • 3/4 cup warm water
  • 23 tablespoons fresh lemon juice
  • 12 teaspoons honey or zero-calorie sweetener (optional)
  • Lemon zest (optional, for garnish)

Instructions

  1. In a small bowl, add 1 tablespoon of unflavored gelatin to 1/4 cup of cold water. Let it sit for 5 minutes to bloom.
  2. Stir in 3/4 cup of warm water (not boiling) and mix until fully dissolved.
  3. Add 2-3 tablespoons of lemon juice and taste it.
  4. If you want it slightly sweet, add 1-2 teaspoons of honey or your preferred sweetener.
  5. Pour the mixture into cups and refrigerate for 2-3 hours until set.

Notes

For a fancier touch, add lemon zest on top. Adjust the amount of water for desired texture.
