Ingredients

- 3 cups all-purpose flour
- 1 tablespoon ground ginger
- 2 teaspoons ground cinnamon
- 1/2 teaspoon ground cloves
- 1/4 teaspoon ground nutmeg
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup molasses
- 1 cup sugar
- 1/2 cup butter, softened
- 1 large egg
Instructions
- Preheat oven to 350°F (175°C) and line baking sheets with parchment or silicone mats.
- Beat softened butter and sugar until light and fluffy, about 2–3 minutes. Add the egg and molasses, mixing until glossy.
- In a bowl, whisk flour, ginger, cinnamon, cloves, nutmeg, baking soda, and salt. Fold dry mix into wet until a cohesive dough forms.
- If too soft to handle, chill dough for 15–30 minutes.
- Use a cookie scoop to form balls, roll in extra sugar if desired, and place 2 inches apart on the sheet. Bake for 9–12 minutes until edges set and tops crackle.
- Let cookies cool for 5 minutes, then transfer to a rack to cool completely.
Notes
Store cookies in an airtight container for up to 5 days. For freezing, flash-freeze dough balls and store in a freezer bag for up to 3 months.
