Description

Deliciously spiced Ginger Molasses Christmas Cookies with a soft center and crackled exterior, perfect for holiday gifting and parties.


Ingredients

  • 1 tablespoon ground ginger
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/4 teaspoon ground nutmeg
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup molasses
  • 1 cup sugar
  • 1/2 cup butter, softened
  • 1 large egg

Instructions

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment or silicone mats.
  2. Beat softened butter and sugar until light and fluffy, about 2–3 minutes. Add the egg and molasses, mixing until glossy.
  3. In a bowl, whisk flour, ginger, cinnamon, cloves, nutmeg, baking soda, and salt. Fold dry mix into wet until a cohesive dough forms.
  4. If too soft to handle, chill dough for 15–30 minutes.
  5. Use a cookie scoop to form balls, roll in extra sugar if desired, and place 2 inches apart on the sheet. Bake for 9–12 minutes until edges set and tops crackle.
  6. Let cookies cool for 5 minutes, then transfer to a rack to cool completely.

Notes

Store cookies in an airtight container for up to 5 days. For freezing, flash-freeze dough balls and store in a freezer bag for up to 3 months.
