Description

A fudgy, warmly spiced brownie infused with molasses and ginger, perfect for the holidays.


Ingredients

  • 6 oz (170 g) bittersweet chocolate (60–70% cacao), chopped
  • 1 cup (200 g) granulated sugar
  • 1/2 cup (100 g) brown sugar, packed
  • 2 large eggs, room temperature
  • 1 teaspoon pure vanilla extract
  • 1/4 cup (85 g) blackstrap or dark molasses
  • 1 cup + 2 tbsp (140 g) all-purpose flour
  • 1/2 cup (50 g) unsweetened cocoa powder (Dutch-process preferred)
  • 1 teaspoon baking powder
  • 1/2 teaspoon fine sea salt
  • 2 teaspoons ground ginger
  • 1 teaspoon ground cinnamon
  • 1/41/2 teaspoon ground cloves or allspice (optional, to taste)
  • 1/2 cup chopped pecans or walnuts (optional)
  • 4 oz cream cheese, room temperature + 2 tablespoons sugar (optional for swirl)

Instructions

  1. Preheat oven to 350°F (177°C). Line the pan with parchment, leaving an overhang for easy removal.
  2. Melt butter and chocolate together over a double boiler or in the microwave. Let cool slightly.
  3. Whisk in granulated and brown sugar until dissolved. Add eggs one at a time, mixing well. Stir in vanilla and molasses.
  4. In another bowl, sift flour, cocoa, baking powder, salt, ginger, cinnamon, and cloves.
  5. Fold dry ingredients into wet mixture until just combined. Fold in nuts if using.
  6. If adding cream cheese, beat it with sugar until smooth, dollop onto batter, and swirl with a knife.
  7. Bake for 28–35 minutes, checking for doneness. Center should be set but slightly soft.
  8. Cool completely in pan on a wire rack before slicing. Chill for cleaner slices.

For the best texture, avoid overmixing and be cautious with baking time.
