Description

A delightful mash-up of soft gingerbread cookies with a tangy cheesecake center, perfect for the holiday season.


Ingredients

  • 2 cups (240 g) all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp fine salt
  • 2 tsp ground ginger
  • 1 tsp ground cinnamon
  • 1/4 tsp ground cloves or allspice
  • 1/2 cup (113 g) unsalted butter, room temperature
  • 3/4 cup (150 g) packed brown sugar
  • 2 tbsp molasses (unsulphured)
  • 1 large egg, room temperature
  • 1 tsp vanilla extract
  • 8 oz (225 g) full-fat cream cheese, room temperature
  • 1/3 cup (40 g) powdered sugar, sifted
  • 1 large egg yolk, room temperature
  • 1 tsp lemon juice
  • 1/2 tsp vanilla extract
  • Pinch ground cinnamon or ginger (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment or silicone mats.
  2. Prepare the cheesecake filling by beating cream cheese until smooth. Add powdered sugar, egg yolk, lemon juice, vanilla, and optional spice; mix until combined. Chill in a piping bag for at least 10 minutes.
  3. Whisk flour, baking soda, salt, and spices in a bowl.
  4. Cream butter and brown sugar until fluffy (about 2-3 minutes). Mix in molasses, then add egg and vanilla until smooth.
  5. Gradually incorporate dry ingredients. Chill dough for 30-60 minutes to prevent spread.
  6. Form dough into balls (1.5-2 tbsp each) on baking sheet, flatten slightly, and add about 1 tsp cheesecake filling.
  7. Bake for 10-12 minutes until edges are set and tops are cracked. Let cool on sheet for 5 minutes before transferring to a wire rack.
  8. Dust with powdered sugar or sprinkle with flaky sea salt if desired.

Notes

Dough and baked cookies freeze well. Bake from frozen dough, adding 1-2 minutes to bake time.
