  • 1/2 cup Butter, melted
  • 1/4 cup Brown Sugar
  • 16 oz Cream Cheese, softened
  • 1 cup Sour Cream
  • 1 cup Granulated Sugar
  • 1/2 cup Molasses
  • 3 Eggs
  • 1 tsp Ground Ginger
  • 1 tsp Ground Cinnamon
  • 1/2 tsp Ground Nutmeg
  • Whipped Cream (for topping)
  • Gingerbread Crumbles (for decoration)
  • Cinnamon or Nutmeg (for garnish)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a food processor, pulse the gingerbread cookies into fine crumbs.
  3. Mix crumbs with melted butter and brown sugar until well combined.
  4. Press the mixture into the bottom of a 9-inch springform pan to form a crust.
  5. Bake for 10 minutes and let cool.
  6. In a mixing bowl, beat the cream cheese until smooth.
  7. Add granulated sugar, sour cream, molasses, eggs, ginger, cinnamon, and nutmeg; beat until combined.
  8. Pour the filling over the cooled crust and smooth the top.
  9. Bake for 45-55 minutes, until the center jiggly but set.
  10. Turn off the oven and let the cheesecake cool inside for 1 hour, then cool room temperature before refrigerating for at least 4 hours.
  11. Top with whipped cream and gingerbread crumbles before serving.
