- 10–12 Gingerbread Cookies
- 1/2 cup Butter, melted
- 1/4 cup Brown Sugar
- 16 oz Cream Cheese, softened
- 1 cup Sour Cream
- 1 cup Granulated Sugar
- 1/2 cup Molasses
- 3 Eggs
- 1 tsp Ground Ginger
- 1 tsp Ground Cinnamon
- 1/2 tsp Ground Nutmeg
- Whipped Cream (for topping)
- Gingerbread Crumbles (for decoration)
- Cinnamon or Nutmeg (for garnish)
Instructions
- Preheat the oven to 350°F (175°C).
- In a food processor, pulse the gingerbread cookies into fine crumbs.
- Mix crumbs with melted butter and brown sugar until well combined.
- Press the mixture into the bottom of a 9-inch springform pan to form a crust.
- Bake for 10 minutes and let cool.
- In a mixing bowl, beat the cream cheese until smooth.
- Add granulated sugar, sour cream, molasses, eggs, ginger, cinnamon, and nutmeg; beat until combined.
- Pour the filling over the cooled crust and smooth the top.
- Bake for 45-55 minutes, until the center jiggly but set.
- Turn off the oven and let the cheesecake cool inside for 1 hour, then cool room temperature before refrigerating for at least 4 hours.
- Top with whipped cream and gingerbread crumbles before serving.
