- Add Molasses and Egg: Mix in the molasses and the egg, followed by the vanilla extract and espresso powder. Beat until well combined.
- Combine Wet and Dry Ingredients: Gradually add the dry ingredients to the wet mixture, mixing on low speed until just combined. Avoid overmixing to keep the cookies tender.
- Chill the Dough: Wrap the dough in plastic wrap and refrigerate for at least 30 minutes. This helps the flavors meld and makes the dough easier to handle.
- Scoop and Shape: Once chilled, scoop tablespoon-sized portions of dough and roll them into balls. Place them on the prepared baking sheets, leaving space between them for spreading.
