Description

Ingredients

  • 1/2 cup unsalted butter, softened

  • 8 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract (for frosting)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, mix together oats, flour, baking powder, baking soda, ginger, cinnamon, nutmeg, and salt.
  3. In another bowl, cream together butter, brown sugar, and granulated sugar until lighter and glossy. Add the egg and vanilla, mixing well.
  4. Gradually add the dry ingredients to the wet ingredients and combine gently.
  5. Drop spoonfuls of dough onto the prepared baking sheet, spacing them apart.
  6. Bake for 10-12 minutes or until edges are golden. Cool on a rack.
  7. For the frosting, beat cream cheese with powdered sugar and vanilla until smooth.
  8. Spread frosting between two cookies to create a sandwich.
  9. Serve immediately or chill briefly for a firmer center.

Notes

Store in an airtight container in the refrigerator for up to three days. Freeze cookies without filling for up to two months.
