- 2 boneless, skinless chicken breasts
- 1 cup Greek yogurt
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup cooked rice or quinoa
- 1 cup cucumber, diced
- 1 cup cherry tomatoes, halved
- 1/2 red onion, thinly sliced
- 1/2 cup crumbled feta cheese
- Fresh parsley, chopped (for garnish)
- Tzatziki sauce (for serving)
Instructions
- In a bowl, combine Greek yogurt, minced garlic, olive oil, oregano, salt, and pepper. Add chicken breasts and marinate for at least 30 minutes.
- Grill the marinated chicken over medium-high heat for 6-7 minutes on each side, or until fully cooked. Let it rest, then slice.
- In serving bowls, layer cooked rice or quinoa, followed by sliced grilled chicken, diced cucumber, cherry tomatoes, red onion, and feta cheese.
- Drizzle with tzatziki sauce and garnish with parsley. Serve and enjoy!
Notes
For best flavor, marinate chicken for longer if time allows. Optional: add olives or spinach for variation.
