Description
A comforting dish featuring turkey meatballs seasoned with garlic and herbs, served over lemon herb rice.

- 1 pound ground turkey
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 egg
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
- 1 tablespoon olive oil
- 1 cup long-grain rice
- 2 cups chicken broth
- 1 lemon, juiced and zested
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh dill, chopped
Instructions
- Preheat the oven to 400°F (200°C).
- Coat a baking sheet with a light coat of oil.
- In a bowl, mix together ground turkey, breadcrumbs, Parmesan, egg, garlic, oregano, basil, salt, and pepper until well combined.
- Form the mixture into meatballs and arrange them on the baking sheet.
- Drizzle olive oil over the meatballs and bake for 20-25 minutes, or until cooked through.
- Meanwhile, bring chicken broth to a boil in a pot. Add rice, lemon juice, and half of the lemon zest. Cover and simmer for 15 minutes.
- Once the rice is cooked, fluff with a fork and stir in parsley, dill, and remaining lemon zest.
- Serve meatballs on top of lemon herb rice.
Notes
Serve with plain yogurt on the side for a creamy contrast. Pair with a salad for freshness.
