Ingredients

- 2 cups sugar
- 1 cup water
- 1/2 cup green tea (brewed and cooled)
- 1/4 cup fresh lemon juice
- 1 tablespoon grated ginger
- 1/4 cup corn syrup
- 1/4 teaspoon salt
- Powdered sugar (for dusting)
Instructions
- In a saucepan, combine sugar, water, corn syrup, and salt over medium heat. Stir until the sugar dissolves.
- Stir until glossy and the grains disappear, watching the liquid become clear and smooth.
- Bring the mixture to a boil and let it cook until it reaches the hard candy stage (around 300°F or 149°C).
- Remove from heat and quickly stir in the green tea, lemon juice, and grated ginger.
- Pour the mixture into a greased baking dish and let it cool completely.
- Once cooled, cut into small squares and dust with powdered sugar to prevent sticking.
- Store in an airtight container.
Notes
For extra flavor, add a pinch of cayenne or a small scrape of vanilla. Store the chews in a cool, dry place.
