Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, beat together the butter and sugar until light and fluffy, about 2-3 minutes.
- Add the egg and vanilla extract, mixing until fully combined.
- Stir in the green food coloring until you reach the desired shade.
- In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add to the wet ingredients until just combined.
- Scoop spoonfuls of dough onto a lined baking sheet, spacing them 2 inches apart.
- If desired, add toppings like red sprinkles or white chocolate chips on top.
- Bake for 10-12 minutes or until the edges are lightly golden.
- Allow to cool on the baking sheet for 5 minutes before transferring to a wire rack.
Notes
For a touch of fun, consider adding a few drops of peppermint extract or swapping some flour for cocoa powder for chocolate cookies.
