Ingredients

  • 1 to 1 1/4 cups fresh fruit or fruit juice, strained if using pulp
  • Gelatin powder or agar agar, measured carefully to match your liquid amount
  • Sweetener (honey, maple syrup, or cane sugar) to taste
  • 1 teaspoon to 1 tablespoon fresh lemon juice
  • 1/4 to 1/2 cup water
  • Optional: Vanilla extract or floral water for aroma
  • Pin molds, silicone trays, or a shallow pan lined with parchment
  • Optional add-ins: pinch of salt, fresh mint leaves, or natural food coloring

Instructions

  1. Measure and prep your fruit, then simmer with a splash of water for 5 to 10 minutes until fragrant.
  2. Strain through a fine mesh strainer to remove seeds and pulp.
  3. Bloom the gelatin or prepare agar by letting it sit in cool water for 5 minutes.
  4. Warm the fruit juice over low heat, adding sweetener and lemon juice until dissolved.
  5. Combine the warm juice with the bloomed gelatin or dissolved agar, whisking until glossy.
  6. Add final flavor touches like vanilla or salt, adjusting to taste.
  7. Pour the mixture into molds and tap gently to remove air bubbles.
  8. Chill in the refrigerator for at least 2 hours, until firm.
  9. Unmold gummies and dust lightly with cornstarch or sugar if desired.

Notes
