Instructions
- Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
- Whisk together the whole wheat flour, baking powder, baking soda, cinnamon, and salt in a large bowl.
- Combine the grated carrots, Greek yogurt, maple syrup, vegetable oil, eggs, and vanilla extract in another bowl.
- Pour the wet ingredients into the dry ingredients and stir until just combined.
- Divide the batter evenly among the muffin cups, filling each about two-thirds full.
- Bake for 18-20 minutes or until a toothpick inserted comes out clean.
- Let cool and enjoy plain or with cream cheese frosting.
