Delicious Vegetarian Lasagna

Description

A hearty and flavorful vegetarian lasagna layered with rich marinara sauce, creamy ricotta, and fresh vegetables.


Ingredients

  • 9 lasagna noodles
  • 2 cups marinara sauce
  • 1 cup ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 1 zucchini, sliced
  • 1 bell pepper, diced
  • 1 cup spinach
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the lasagna noodles according to package instructions; drain and set aside.
  3. In a mixing bowl, combine ricotta cheese, Italian seasoning, salt, and pepper.
  4. Spread a thin layer of marinara sauce at the bottom of a baking dish.
  5. Layer 3 lasagna noodles over the sauce.
  6. Spread half of the ricotta mixture over the noodles, followed by a layer of zucchini, bell pepper, and spinach.
  7. Top with 1/3 of the mozzarella and a layer of marinara sauce.
  8. Repeat the layers, starting with noodles, then ricotta, vegetables, mozzarella, and sauce.
  9. Finish with a final layer of noodles, remaining marinara, and sprinkle with Parmesan and the rest of the mozzarella.
  10. Cover with foil and bake for 30 minutes; remove foil and bake for an additional 15 minutes, or until golden and bubbly.
  11. Let cool for 10 minutes before slicing and serving.
