Description

Ingredients

  • 1 pound diced vegetables (such as carrots, potatoes, and celery)
  • 1 can diced tomatoes
  • 4 cups vegetable or chicken broth
  • 1 can beans (such as kidney or cannellini)
  • 1 teaspoon dried herbs (like thyme or oregano)
  • Salt and pepper to taste
  • Crusty bread for serving

Instructions

  1. Combine all ingredients except the crusty bread in the crockpot.
  2. Stir the diced vegetables, tomatoes, broth, beans, and dried herbs into the pot until well mixed.
  3. Set the crockpot to low for 6-8 hours or high for 3-4 hours.
  4. Taste and adjust seasoning with salt and pepper once vegetables are tender.
  5. Serve hot with crusty bread on the side.

Notes

For a richer soup, stir in a spoonful of butter. Add fresh herbs at the end for brightness. The soup can be thickened by blending a portion of it or adding pasta.
