Instructions
- Combine all ingredients except the crusty bread in the crockpot.
- Stir the diced vegetables, tomatoes, broth, beans, and dried herbs into the pot until well mixed.
- Set the crockpot to low for 6-8 hours or high for 3-4 hours.
- Taste and adjust seasoning with salt and pepper once vegetables are tender.
- Serve hot with crusty bread on the side.
Notes
For a richer soup, stir in a spoonful of butter. Add fresh herbs at the end for brightness. The soup can be thickened by blending a portion of it or adding pasta.
