- 1 cup honey
- 2 cups all-purpose flour
- 1½ teaspoons baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- 1 teaspoon ground cinnamon
- ¼ teaspoon ground nutmeg
- 3 large eggs
- ¾ cup brown sugar
- ½ cup vegetable oil
- 1 teaspoon vanilla extract
- Zest of 1 orange
- ½ cup brewed coffee or black tea, cooled
- Powdered sugar or extra honey for topping (optional)
Instructions
- Preheat oven to 350°F. Grease and flour a 9-inch round or loaf pan.
- In a bowl, whisk flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
- In another bowl, beat eggs and brown sugar until fluffy.
- Add honey, oil, vanilla, orange zest, and coffee to the egg mixture. Stir until smooth.
- Stir in dry ingredients just until combined.
- Pour into prepared pan and bake for 45–50 minutes.
- Cool in pan for 10 minutes, then transfer to a rack.
- Drizzle with honey or dust with powdered sugar before serving.
Notes
For a richer flavor, swap half of the oil for melted butter. If desired, add chopped nuts or fruits for variation.
