  • 3 cups all-purpose flour (375 g)
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt

Instructions

  1. In a small bowl, combine rolled oats with warm milk and let it sit for 10 minutes to soften.
  2. Dissolve active dry yeast in warm water, add one tablespoon of honey, and let it sit for 5-10 minutes until bubbly.
  3. Add softened oats, melted butter, and honey to the yeast mixture, then stir until combined.
  4. Gradually mix in all-purpose flour, cinnamon, and salt until a shaggy dough forms.
  5. Knead the dough on a lightly floured surface for about 8-10 minutes until smooth and elastic.
  6. Place the dough in an oiled bowl, cover with a damp cloth, and let it rise for 1-1.5 hours until doubled in size.
  7. Punch down the dough and shape it into a log, placing it in a greased loaf pan for a second rise of 30-40 minutes.
  8. Preheat the oven to 375°F (190°C) and bake the bread for 30-35 minutes until golden brown and hollow-sounding when tapped.
  9. Remove from the pan and cool on a wire rack before slicing.
