Ingredients

- 1 cup jasmine or long-grain rice
- 1/4 cup honey (or maple syrup for a vegan alternative)
- 1 lime (juiced)
- Salt and pepper to taste
- Olive oil for cooking
- Fresh cilantro for garnish (optional)
Instructions
- Marinate the chicken in honey, lime juice, salt, and pepper for at least 30 minutes.
- Cook the rice according to package instructions and fluff with a fork when done.
- In a pan, heat olive oil over medium heat and cook the marinated chicken until golden brown, about 6–7 minutes per side.
- Slice the avocado into neat, uniform slices.
- Assemble the stack by layering cooked rice, chicken, and avocado slices.
- Drizzle with additional honey lime sauce and garnish with cilantro if desired.
Notes
For a gluten-free dish, ensure your condiments are unadulterated. For vegan options, use grilled tofu instead of chicken and maple syrup instead of honey.
