Ingredients

  • 1 ripe avocado
  • 1 cup jasmine or long-grain rice
  • 1/4 cup honey (or maple syrup for a vegan alternative)
  • 1 lime (juiced)
  • Salt and pepper to taste

Instructions

  1. Marinate the chicken in honey, lime juice, salt, and pepper for at least 30 minutes.
  2. Cook the rice according to package instructions and fluff with a fork when done.
  3. In a pan, heat olive oil over medium heat and cook the marinated chicken until golden brown, about 6–7 minutes per side.
  4. Slice the avocado into neat, uniform slices.
  5. Assemble the stack by layering cooked rice, chicken, and avocado slices.
  6. Drizzle with additional honey lime sauce and garnish with cilantro if desired.
